Butternut Fritters is a much loved traditional South-African dish! My mom made it when we would have Sunday lunch which include rice, some veggies and some roast meat with some gravy and butternut fritters was always included!
We get pumpkin fritters they are just as good there is no difference except that I love butternut more than pumpkin and so I decided to make butternut fritters!
Delicious, fluffy and easy to make!
Butternut Fritters with Cinnamon Sugar
1 Whole Butternut peeled and chopped into blocks
1 Cup of Flour
1 Tablespoon of Baking Powder
Pinch of Salt
500ml Boiling water
Sunflower oil for the pan
2-3 Tablespoons Cinnamon
4-5 Tablespoons White Sugar
Mix it together and dip the butternut fritters into it so that it cover both sides.
In a microwave bowl put the butternut, pinch of salt and 500ml boiling water.
Place in the microwave uncovered for 20min. till the butternut is soft.
With a blender make the butternut soft.
Add the egg, flour and baking powder and mix well.
In a pan add the oil, if the oil is hot add a scoop full of the mixture and place in the oil.
Let the butternut fritters cook in the oil so that it is golden brown on each side.
Place on kitchen paper so that the oil can drain off.
Dip in some cinnamon sugar so that it is covered on both sides and enjoy!
Serve and enjoy!
