Roasted Whole Chicken

There is nothing as delicious as whole roasted chicken.

You can just pop the chicken in a roasting pan, take some lemons and grate some lemons for lemon rind.

Sprinkle over the chicken, with herbs and spices and olive oil.

Cut up few potatoes about five or six and pop them in the micorwave uncovered for about 10 minutes.

Add to the roasting pan grate and cut up carrots, baby marrows, onions and mushrooms and add them too.

Add the lemons you cut up as well and place them downside in the roasting pan.

Squeeze out the lemon juice over the chicken before placing them in the roasting pan.

Sprinkle some olive oil over all the vegetables and chicken.

Add coarse salt and pepper.

Place lid over roasting pan and place in the oven on 180 Degrees Celsius, after one hour turn whole chicken over and put roasting lid aside.

Let chicken roast for 30 minutes more.

Take out of oven and serve!

Can be served with rice or anything you prefer!
