In a pan add some olive oil and add two chopped up onions, 1 chopped spring onion, 1 chopped green pepper, one chopped radish and 5mushrooms chopped up.
Add some coarse salt and pepper and herbs and spices and let it brown.
Add 3 boneless and skinless chicken thighs in the pan, sprinkle some tumeric and curry powder over each piece and turn around and do the same.
Add some more coarse salt and pepper and sprinkle some sugar on both sides again.
Let it simmer on medium heat for 20minutes.
While it is simmering peel and chop up 3 potatoes and 3 carrots.
After it has simmered add to the pressure cooker and add the potatoes and carrots.
Add between 600-700ml water and add in 1 and a 1/2 cups of rice and mix through.
Close the lid and put the pressure cooker on for 45min.
After 45min is finished slide to remove pressure and wait for the steam to blow out .
Serve hot and enjoy!
