These rock cookies bring back so many memories. I just love these, it is a very traditional South-African favorite!
The recipe is not my own, it’s Cecilia Bedser’s Recipe from Food Lovers Recipes.
I only used 3 cups of oatmeal.
These cookies are not baked. Work quickly when you scoop into pans.
This set quite quickly.
125ml peanut butter
5ml vanilla essence
about 5 x 250ml oatmeal or meusli or a mixture of the two
Place the sugar, milk, cocoa and butter in a saucepan and bring to boil while
Lower the heat and simmer for 3-5 minutes.
Remove from heat and stir the peanut butter and vanilla essence into the mixture.
Just add enough oatmeal so that the mixture is firm.
Take two teaspoonsful and place onto sheets of baking paper and leave it to set.
Makes 46 cookies.
