We all love cottage pie, for the most part. My mom always made this for us and we couldn’t wait for dinner. I put my own twist on it, and made it a chicken cottage pie. It is very rich but soooo delicious with just the right flavours and spices. Hope you enjoy it as much as I enjoyed making it!

In a pan add in some olive oil and fry one onion till golden brown.
Add in one red capsicum chopped with some coarse salt and pepper, mixed herbs and a little bit of sugar.
Add in 400g of chopped boneless chicken fillets. Fry the chicken till sealed on all sides then add the chopped mushrooms.
Let it all fry for 15-20 minutes.
Now add in one can of evaporated milk(370ml). Let it boil on high and then add 1tbs of cornflour and mix well. If the consistency becomes more thicker turn off the stove and set aside.
Spray and cook an oven dish then place in your chicken mixture and then the mash on top that you already prepared.
Sprinkle some grated cheese on top and then some paprika over.
Place in the oven on 180 degrees celsius for 45 minutes to an hour until the top is crispy and brown.
Take out of the oven and let it cooldown a little before serving.
