This dish is very close to my heart, growing up this was the go-to meal my mom would make. When you ran out of ideas in the week and by the weekend you throw together a few simple ingredients and you have a wonderful delicious and easy meal the whole family will love!
Cook about a cup to a cup and a half of macaroni pasta and set aside.
In a pan add a little bit of olive oil and a chopped onion, add coarse salt and pepper and mixed herbs.
After the onion is golden brown, add in one red capsicum. Add in about 500g of minced beef. Fry until sealed on both sides.
Add in a few mushrooms chopped and two tomatoes. Add in dark soy sauce and fry for 30 minutes.
In a jug add in 6-7 eggs and whisk and add in a teaspoon of milk.
In an oven dish spray with spray and cook.
Mix the pasta with the mince and place in the oven dish. Pour the mixed eggs in and sprinkle with grated cheese and add tomatoes on top(optional).
Place in the oven on 180 degrees celsius for about 45 minutes.
Remove from the oven and enjoy!
