This delicious and creamy, bacon cabonara was made by my husband. Its very simple and easy and won’t take long to prepare!
Boil and drain about one and a half cups of elbow pasta and set aside.
In a pan add some olive oil and about 300g of bacon. In the oven let it grill for about 15 minutes and turn on both sides until cooked.
Remove from the oven. Cut up into slices. In a frying pan add the oil from the bacon and fry one onion till golden brown, add in some coarse salt and pepper and mix herbs. Add a few mushrooms and one yellow capsicum. Fry till soft, add in the bacon.
Now add in the cooked elbow pasta and add in between 500-700ml of full cream milk. Add in a few tablespoons of flour and put the stove on high. Add in some grated cheese and mix well about a handful.
Wait until the milk starts to boil then simmer for a few minutes and keep on mixing till there is no lumps and the consistency becomes to thicken up.
