This recipe I got from my mother in law. It’s a really simple and easy recipe, the source of the recipe comes from Foodloversrecipes group and website.
1 Tin Condensmilk
1/2 Cup Castor Sugar
1/2 Cup Lemon Juice
For the base:
125g melted butter or margarine
200g coconut biscuits crushed
Mix the butter or margarine with the crushed biscuits and press down in a greased round tart pan.
Heat oven to 160 Degrees Celsius.
Separate egg yolks and egg whites into two seperate bowls.
Whisk the egg whites until stiff Must turn bowl upside down so that it doesn’t fall out.
Add the castor sugar slowly and continue whisking. Set aside.
Mix egg yolks and add the tin of condensed milk.
Add the lemon juice and beat for one minute until the mixture start to set.
Add egg mixture to pie base and the meringue on top and spread evenly.
Bake for 25minutes in the oven.
Cool pie down on oven rack.
Refrigerate pie and enjoy!
