Chicken Lasagna

Love lasagna, so I made this delicious, spicy, saucy, chicken goodness! It’s a real crowd pleaser too.

2 Chicken fillets
2 Carrots peeled and grated
1 Onion chopped
1 Green capsicum chopped
3 Tomatoes chopped
1 Thumb size ginger peeled and grated
1 Tbs tumeric or saffron
1 Tbs curry powder
Salt and pepper to taste
1 Tbs sugar
1 Tbs vinegar
1 Cup of red wine
1 Cup chicken Stock
Paprika for on top
1 Packet of tomato Paste
1 Cup of Celery
1 Tbs mixed herbs
1 Teelepel Sweet Basil spesery
1/2 koppie sonneblom olie
1/2 koppie olyf olie
8 Lasagna Sheets

For the White Sauce:
250g Cheese Grated
1L of Milk
125g Butter
1 1/2 Cups of Flour

Put oven on 180 degrees celsius.
Place the two chicken fillets in an oven pan and pour some olive oil over and some coarse salt and pepper, close with tinfoil and place in the oven for 25-30 minutes.
When the chicken is cooked removed from the oven pan and cut up into strips.

Add some olive oil in a pan and add in all the other ingredients. Let it simmer for about 45min. If the chicken mixture have been simmering for 45min, set aside.

Pour the milk in a microwave jug and place in the micorwave for 10 minutes till warm.
After milk is warm add the butter and place back in the microwave for 5 minutes.
After butter have melted, add in the flour and while adding the flour keep on whisking with a hand whisk, place in the microwave and whisk every 30 seconds till a sauce consistency is formed.
If the sauce is at the right consistency, while whisking add in the grated cheese.

Spray and cook a square oven pan and pour in a layer of white sauce and then two sheets of pasta.
Place the layer of chicken on top of the sheets and then the white sauce. Repeat till your white sauce and chicken mixture is finished.

After you have finished layering, place the grated cheese on top and sprinkle some paprika over. Place in the oven on 180 degrees celsius for 30 minutes.
After it is done in the oven place on cooling rack for 20 minutes to cool down.
Serve and enjoy!
