Lemon, Caramel and Mousse Tart

I came up with this recipe as I love lemon, caramel and mousse. Who wouldn’t love all three together? I know I do!

Crust:
2 cups flour
1/2 cup sugar
1/2 cup butter
1 egg
1 tsp baking powder
pinch of salt

Put the oven on 170 Degrees Celsius.
Rub flour and butter together to form breadcrumbs.
Add the rest of the dry ingredients and add the beaten egg, mix well.
Spray and cook the rectangular tart dish and press the crust until whole tart dish is covered on the sides as well.
Place in the oven till the edges of the crust turn golden brown for about 10-15min.
After it is golden brown set aside to cool down.

Lemon Mousse Layer:
1 Cup Cream
1 and a 1/2 Cup Lemon Curd

Whip the one cup of cream.
After the cream is whipped, fold the lemon curd in.
Spread on the base as the first layer.

Caramel Mousse Layer:
1 Cup Cream
1 Can of Caramel

Whip the one cup of cream.
After the cream is whipped, fold the caramel in.
Spread on top of the lemon mousse layer.

Chocolate Mousse Layer:
1 Cup of Cream
100g Lindt 70% Dark Chocolate Melted

Whip the one cup of cream.
After it is whipped, fold the melted chocolate in.
Spread on top of the caramel mousse layer.

Topping:
1 Packet of Oreo’s crushed and whites removed.

Sprinkle on top of the chocolate mousse layer.
Put in the fridge for 1-2 hours/overnight till set.
Serve and enjoy!
