Malva Pudding

Malva pudding is a delicious warm pudding served with some creamy custard. It’s a real favourite during cold months and when served with your favourite Christmas dinner. I have always used this recipe, it’s from foodloversrecipes. It’s really easy and simple and delicious too!

Pudding:
375 ml (180 g) flour
5 ml bicarbonate of soda
190 ml (160 g) sugar
2 eggs
15 ml apricot jam
30 g butter, melted
5 ml vinegar
150 ml milk

Sauce/Syrup:
250 ml cream
125 g butter
125 ml brown sugar
125 ml water

Method:
Sift together flour and bicarbonate of soda and add the sugar.


Beat together eggs, apricot jam, melted butter, vinegar and milk, then add to dry ingredients, mixing to form a batter.


Spoon into a greased ovenproof dish and bake in preheated oven of 180°C for about 45 minutes or until done.


Place cream,  butter, brown sugar and water in a saucepan and heat until the butter has melted and the sugar has dissolved. Do not allow the mixture to boil.


As soon as the pudding is removed from the oven, pour the hot syrup over it and let it soak into the pudding.


Serve hot or cold with custard or ice cream.
