Today it was pouring with rain, growing up during the winter when we wrote exams, we always would eat porridge for breakfast. This reminded me of being back home and brought back so many memories.
It’s called maize meal and we get it in New Zealand. This simple recipe of mine that you just make in the microwave will only take you 9 minutes to make. We usually add in some sugar, butter and milk, you can even add in some cream too for extra creaminess.
In a microwave safe bowl, add in 1/2 cup of maize meal with a pinch of salt. Now while whisking add in 2 cups of boiling water.
Placed uncovered in the microwave for 4 minutes. Whisk again after the 4 minutes, place back into the microwave for 5 minutes covered.
After the 5 minutes take a spatula and add in some few teaspoons of butter, sugar and some milk to your tasting. It makes enough for 2 people.
