It’s tradition to bake christmas cookies, this time of the year, each year I try something different. Last time I used melted chocolate to coat the cookies, this time I used royal icing and it worked perfectly!
1 Cup of Sugar
4 Cups of Flour
2 Tablespoons of Baking Powder
5ml Vanilla Essence
Pinch of Salt
If the dough is dry just add some water.
Cream the butter and sugar. Add the egg and mix well.
Add the flour, baking powder, pinch of salt and vanilla essence and mix well till the dough is well mixed.
In a preheated oven of 180 degrees bake on baking trays after you have pressed out your cookies. Bake for 10-15 minutes until golden brown. Remove from the baking trays and place on cooling rack to cool down.
I doubled the recipe to make more cookies and applied it when using to make the icing too.
For the icing:
1kg Icing Sugar sifted
6 egg whites
Using a hand mixer, whish the egg whites until peaks form and you can lift the bowl up over your head and the egg whites doesn’t fall on your head. Then you know it’s right.
Move the egg whites to a standing mixer bowl and while mixing add the sifted icing sugar.
After the icing have been incorporated, add the 40ml of water.
Divide the royal icing into 4 bowls and add in the colours you want for decorating the cookies.
Spread the royal icing over your cookies. Serve with a cuppa and enjoy!
