My Gran’s All Bran Muffins

Happy February, with a new month, come endless possibilities and new opportunities to improve, to change and to better ourselves to the best version of ourselves.

Growing up, when we would walk into my grandmother’s kitchen, you would smell this muffins a mile away. I loved these muffins, always look forward to eating them.

My gran would be baking from early in the morning, even Christmas dinners was tradition with the whole family at the table.

My gran is known for her baking and delicious food, I never knew how much work went into this recipe, until I made it, the muffin mix must stand overnight, that is what makew it so fluffy and spongy and just perfect!

I just improved it a little bit and it came out perfect, just like I remember it! This is a family recipe, you will win anyone over with this healthy, feel good, wholesome recipe!

Beat together 3 jumbo eggs and 1 cup of sugar well.

Add 160ml canola oil, 300ml full cream milk and 300ml greek jogurt.

Sift the 3 cups of muffin easy mix, 5ml all spice, 5ml cinnamon, 5ml salt and 10ml baking soda.

Add the sifted dry ingredients and add in 375ml oats and 375ml raisins.

Let the all bran mixture overnight so that it can rest and swell.

Using two muffin pans, place some cupcake cups inside and scoop tablespoons full of the muffin mix inside.

For fan forced ovens:

Preheat oven to 180 degrees celsius. Turn down to 160 degrees celsius for baking for 30 minutes.

For ovens with no fans:

Preheat oven to 200 degrees celsius. Turn down to 180 degrees celsius and bake for 30 minutes or longer.

Let cool down on cooling rack and serve with some coffee or tea, as a breakfast snack.
