Let me tell you a story, to this fudge. I think this was one of the first recipes I made with my cooking partner in consumer studies. While everyone in the classroom chose to do fudge on the stove, we made the microwave fudge. In the end we had to help the whole classroom with their fudge, as their fudge on the stove had burned. It brings back so many memories, me and my cooking partner became really good friends, till today 13 years later. This is my own recipe. So many people have crossed my path and still do, along the way me and my husband share our love for cooking and baking.
Start by placing 2 cups of sugar and 250g unsalted butter in a microwave safe bowl. Place in the microwave, and microwave for 3 minutes until butter is melted. Take a whisk and whisk roughly, place back in the microwave and microwave for 3 minutes, until butter and sugar makes big bubbles and have the texture of honeycomb like bubbles.
Add 1 tin of condensed milk while mixing with the whisk. Place back into the microwave until for 5 minutes. After the 5 minutes the fudge mixture will start to make big bubbles, and bubble up like honeycomb texture. Mix with the whisk again and place back into the microwave for 5 minutes. After 5 minutes whisk again, you will see the fudge mixture is now a toffee brown colour, and more toffee like texture and thicker bubbles, that’s all normal.
Place in a baking tray lined with baking paper.
Let it cool down, cut up into blocks and place on a cookie tray and place in the fridge to cool down completely and is hard. Serve with some coffee and tea and enjoy!
