Carrot & Banana Muffins

I just tweaked this recipe a little today. The banana together with the carrot, adds a delicious flavour, and it’s healthy too!

Beat 3 eggs and 375 ml sugar together until light.

Add to 250 ml of oil and whisk well.

Sift together in separate bowl:
500 ml cake flour
5 ml of baking soda
10 ml baking powder
5 ml nutmeg
7 ml cinnamon

Add to egg mixture and mix well.

Grate 4 medium carrots roughly, adding 1 cup of raisins and 125 ml chopped walnuts.

Mix well and place in prepared muffin pans.

Bake in preheated oven at 160ΒΊ C(fan forced) for 75 minutes.

180 Degrees Celsius for 1 hour and 30 minutes, conventional oven.

After baking, let it cool down a few minutes. Place on cooling rack, after it has cooldown, eat immediately!

Makes 21 muffins.

Side note: I added 3 mashed bananas. I did not have walnuts, so I just left it out. Recipe from Foodloversrecipes.
