My husband made this cake for me, when we just started dating. My mom enjoyed it too, it’s light and fluffy and will soon become a family favourite! I don’t know the resource of this recipe but my mother in-law have been making this chocolate cake recipe since I can remember.
It’s our go to chocolate cake recipe!
Batter
50g (125ml) Cocoa Powder
250ml Boiling Water
4 Large Eggs, separated
300g (375ml) Sugar
125ml Cooking Oil
5ml Vanilla Essence
250g (450ml, measured unsifted) Cake Flour
15ml Baking Powder
2ml Salt
Preheat the oven to 180 Degrees Celsius.
Grease 2 (20 or 23cm diameter cake tins).
Spray them with non-stick cooking spray.
Mix the cocoa and boiling water until the lumps have disappeared, set aside to cool down.
Beat the egg yolks, then beat in the sugar a little at a time.
Beat the mixture until it is spongy, thick, and pale in colour.
Stir the cocoa mixture, cooking oil and vanilla essence into the egg yolk mixture.
Sift together the cake flour, baking powder and salt and stir it into the mixture.
Beat the egg whites until just stiff and fold them into the batter with a metal spoon.
Pour the batter into the tins and bake on the middle shelf in the oven for 25 to 30 minutes, or until done. Turn out onto a wire rack to cool.
Decorate the chocolate cake to your preferences.
