As a kid growing up, I loved eating coconut ice! It’s sweet, it’s delight in every bite! I made this simple, easy recipe for you to make as well!
What you need:
395g Tin of Condensed Milk
2 and a 1/2 Cups of Icing Sugar
2 Cups Dessicated Coconut
1 Tsp Tartar
Few Drops of Food Colouring
Extra icing sugar for dusting before and after
In a mixing bowl, add in the condensed milk, add in the coconut and while using a spatula, add in the icing sugar and tartar.
Mix well till the coconut ice forms a dough like consistency.
If the coconut ice is still too runny, add in some more icing powder.
Devide the coconut ice mixture into two bowls.
Add in 1 drop of pink food colouring to the one bowl, and 2 drops to the 2nd bowl.
Incorporate well, until it is the colour light pink and dark pink.
In a tray add some icing sugar, dust each coconut ice piece on each side with some icing sugar, shape it in a rectangular shape and place on a bread pan lined with some baking paper.
Place the first layer, and then do it with the 2nd layer.
Let it set overnight in the fridge till hard.
Cut up into blocks, and press some icing sugar onto the coconut ice blocks till all sides are covered.
Place in an airtight container.
Serve and enjoy!
