Ginger nuts is a well known and loved kiwi ginger biscuit. It’s rock hard but onced it’s dipped into your preferred warm drink, it’s delicious, melt in the mouth, ginger overload goodness!
I got this recipe from a friend of mine, who always make these, she says her batches never comes out the same, this is her mother in-law’s recipe, she is already in her 70’s.
If you realised by now, that I am bringing you recipes that have been passed on through generations, the old people, the granny’s really know their stuff when it comes to baking and cooking.
Today I am so grateful, to share with you all these family recipes from far and wide. These ginger nuts biscuits are devine!
Ingredients:125g Butter (room temp)
1 1/2 cups sugar
1 egg
1 TBsp syrup
1 1/2 cups flour
1/2 tsp Baking Soda
2 tsp ground ginger
1 TBsp Baking powder (yes really)
Pinch salt
Method
Cream butter & sugar, add egg & syrup, beat together. Sift dry ingredients then add to creamed mixture. Roll into small balls -do not flatten. Bake 180 degrees celsius for 15-20 mins.
Makes 24 – 30 biscuits.
Sidenotes:
I added 12 balls per tray and added in more flour, so that it’s more like a biscuit consistency.
