Healthy Chocolate Mousse

This idea popped into my head just randomly! This is a new healthier alternative to mousse made with cream.

It is so airy, light, bubbly and melt in the mouth. It does not contain any egg yolks, like the traditional recipe calls for. It’s cholesterol friendly as well, high in protein, and really delicious.

Start by melting 70% dark chocolate, a 90g block, break up in pieces and place in a microwave safe bowl. Microwave on high for 1-3 minutes. Mix with a spoon every 30 seconds, till melted. Set aside, and wait for the chocolate to cooldown, about 10 minutes.

In a separate bowl, using a hand mixer, beat the egg whites till stiff peaks form and you can tip the bowl over your head and the egg whites doesn’t fall on your head, then you know it is ready.

Slowly fold in the melted dark chocolate, until everything is well incorporated.

Spoon into glass ramekins and place in the fridge to set. This mousse is enough for 2 people, I used mint dark chocolate, but you can use any dark chocolate, any chocolate really.
