This easy dish, is pretty much a no brainer, it’s veggie friendly, packed full of protein from the eggs and veggies. You can add some meat if you’d like, it’s great as a side dish too!
This is a really easy recipe I made, you can even add sauces to make it even tastier.
4 and a 1/2 Cups of Rice already cooked and prepared, at least a day old.
1 Onion chopped
1 Cup of Frozen Peas
1 Cup of Mixed Veggies
4 Eggs Mixed
2 Tbs Peanut Oil
Olive Oil for frying
2 Tbs Soy Sauce
Salt and Pepper to taste
In a skillet add in the olive oil and let it heat up, add in the chopped onion and let it get golden and brown.
Add in the rice, add in the peanut oil and soy sauce, salt and pepper, mix through and let the rice heat up with the onion.
Add in the frozen veggies and mix with the rice and onion, let it simmer for 20 – 30 minutes and mixing every few minutes till the veggies are cooked.
Add in the 4 mixed eggs. Place the skillet on high heat and while mixing, mix the eggs through the rice and veggie mixture. Turn the stove down to medium heat.
Mix the eggs through until well cooked for a few minutes.
Serve and enjoy!
You add some meat too if you like!
