Oxtail potjie is a well known South African dish. It is enjoyed on winter nights and around the campfire where everyone have their wine in hand. It brings back so many memories.
Now I bring oxtail potjie to you, in the comfort of your own home. Where you can make it in the pressure cooker and put your own touch to it.
If you have red wine in the fridge, you can add it to the oxtail potjie,it will make it even tastes better. You can add any veggies really and serve it with rice or bread dumplings.
My husband always makes potjie for us, it comes out even better every time he makes it for us.
5-6 Pieces of oxtail
1 Onion chopped
1-2 Cups of coke
4-5 Carrots peeled and chopped
4 Potatoes peeled and chopped
1 Cup frozen beans
1 Cup mixed veggies
Salt and pepper to taste
Olive oil for frying
2 Cups Rice already cooked and set aside
In the pressure cooker pot on the stove add some olive oil, wait for the olive oil to heat up, add the onion and fry till soft, add the oxtail pieces, fry till the meat is sealed and brown.
Place the pressure cooker pot into the pressure cooker, add in a cup of coke or more if you’d like. Close the lid, and put on pressure, let it cook for 60 minutes.
Remove the pressure and let the pressure out after 60 minutes, add in the potatoes and carrots. Close the lid again and put on pressure, let it cook for another 60 minutes.
In between the cooking, add in salt and pepper to taste.
Remove the pressure and remove the lid, add in the frozen veggies and put on pressure again for 45 minutes.
Release the pressure after 45 minutes, remove the lid and remove all the bones in the pot, mix through and then add in 2 cups of rice already prepared, mix through and enjoy!
