I love making fritters, the corn fritters is the perfect side for any dish. This recipe is just as easy and simple to make like the butternut and pumpkin fritters recipes.
In a mixing bowl add 1 tin of creamed corn.
Add in 2 eggs, and mix well using a spatula.
Sift together 1 cup of flour, 40ml caster sugar, 1 teaspoon baking powder and pinch of salt.
Add the sifted ingredients to the wet ingredients.
Fold in using the spatula till well incorporated.
Place spoonfuls full in hot canola oil in a skillet pan on the stove. Boil on each side for a few minutes till golden brown.
Place in a bowl covered with paper towels, so that the oil can drain.
Serve with some rice and vegetables of your choice.
