This simple recipe, is the perfect dessert for any quick get together. Who doesn’t love lemon cheesecake, yes we all do. I adapted this recipe, it was the condensed milk cheesecake recipe, I upgraded the recipe to a delicious lemon cheesecake.
I used Krispies as the base, it’s coconut vanilla biscuits, I would recommend also using a ginger biscuit base, it goes well with the lemon too.
It’s delicious lemon flavour, not overpowering and just perfect. Enjoy with a cup of tea or coffee as a yummy dessert.
The recipe is from foodies of SA.
Start by crushing 250g of Krispies biscuits in a food processor or in a bag using a rolling pin. Add in 50g melted butter. Mix through using a fork until there are no lumps. Press down into a prepared rectangular dish. Place in the fridge.
Now mix 625g cream cheese ( I used Philidelphia). The cream cheese should be fridge temperature. Add in 300ml fresh cream and 1 tin of condensed milk, and mix well.
Add in 60ml of lemon juice and mix well. Add in lemon rind of 1 lemon and mix well. Place in the rectangular dish over the base.
Cover with any coulis or topping.
Place in the fridge overnight and serve when set! Enjoy!
