My mother in-law makes the best chicken al la king ever. I made chicken al la king like my mother in-law makes it only from memory. Trying to replicate the flavours and what she puts into her chicken al la king.
I got it right. It’s delicious and tastes just right. A quick, easy dinner in under an hour. If you want you can add some cream to it to make it more creamier.

1 Chicken Fillet Chopped
1 Red or Green Capsicum Chopped
1 Onion Chopped
5 – 7 Mushrooms Chopped
500ml Chicken Stock
300g Grated Cheddar
Salt and Pepper to Taste
Oil for frying
2 Cups of Rice cooked and set aside.
In a frying pan add the oil. Add the onion and capsicum, fry till the onion is golden brown and capsicum is soft.
Add the chicken, salt and pepper, mixed herbs and soy sauce. Fry the chicken till sealed and browned.
Add 2 cups of rice. Mix through the chicken mixture till well incorporated. Add the chicken stock and simmer on low heat for 10 – 15 minutes.
Slowly add the grated cheese, add in little by little till all the cheese is used up and the cheese is melted throughout.
Serve and enjoy!
