Curry Mince & Rice

Being from South-Africa, curry and rice is at every bazaar and event. When winter comes, people are selling this well loved dish at the shops too.

My mom also makes the best curry and rice. This is for the rainy and cold winter days.

Ingredients:
800g Tin Tomatoes
500g Beef Mince
1 Onion Chopped
4 Carrots Peeled and Chopped
7 Small Potatoes Peeled and Chopped
1 Red Capsicum Chopped
60ml Mild Curry Powder
80ml Chutney
Sugar, few tablespoons
Mixed Herbs
Salt and Pepper
Oil for Frying
Soya Sauce

Method:
In a microwave save bowl, add the potatoes with a little water. Place uncovered for 7 minutes till soft. Set aside.

In a frying pan add in some oil and in the onion and capsicum. Fry for 10 minutes till soft. Add in the mince and the rest of the ingredients.

Let it simmer for 20 to 30 minutes, stirring occasionally. After simmering, serve with some rice.
