Vetkoek & Curry Mince

Me and my husband love vetkoek and mince. We grew up eating it and every second shop selling it. With this easy recipe, you can make it and enjoy it too.

If you want to know where to find the best vetkoek dough, I suggest Mama Africa in Pukekohe. You can get it if you are in New Zealand at any South African shop, and you can also ask for it, it usually goes for $4 for 1kg packet.

800g Tin Tomatoes
500g Beef Mince
1 Onion Chopped
4 Carrots Peeled and Chopped
7 Small Potatoes Peeled and Chopped
1 Red Capsicum Chopped
60ml Mild Curry Powder
80ml Chutney
Sugar, few tablespoons
Mixed Herbs
Salt and Pepper
Oil for Frying
Soya Sauce

In a microwave save bowl, add the potatoes with a little water. Place uncovered for 7 minutes till soft. Set aside.

In a frying pan add in some oil and in the onion and capsicum. Fry for 10 minutes till soft. Add in the mince and the rest of the ingredients.

Let it simmer for 20 to 30 minutes, stirring occasionally. After 30 minutes set aside.

In a deep fryer add in some oil, wait for it to heat up. If the oil is hot, and on 190 degrees. Stretch your vetkoek dough and place in the oil.

Fry on both sides till golden brown. Cut in halve and add in some curry mince. Serve and enjoy.
