The highlight for me for 2020 was to be able to pull this yummy dessert off. It is definitely on the top of my list of desserts. In South-Africa at Woolworths foods I love eating their chocolate desserts, it is always so decadent and chocolate mousse just perfect, fluffy and delicious. This dessert reminds me of Woolworths foods desserts.
Since growing up, I never liked the mixture of fruits, jellies and custard together. I decided to make my own trifle using chocolate mousse, cream and delicious chocolate cake.
It came out better than I ever expected and when you first start to dig into it, you just keep coming back for more, that’s literally how good and delicious this trifle is.
This recipe is quite long, so if you don’t mind all the reading to make it, I bet it will become a household favourite.
For the Cake layers I used the chocolate cake made with oil. Here is the recipe to make the cake layers for the trifle.
50g (125ml) Cocoa Powder
250ml Boiling Water
6 Large Eggs, separated
300g (375ml) Sugar
125ml Cooking Oil
5ml Vanilla Essence
250g (450ml, measured unsifted) Cake Flour
15ml Baking Powder
Preheat the oven to 180 Degrees Celsius.
Grease 2 (20 or 23cm diameter cake tins).
Spray them with non-stick cooking spray.
Mix the cocoa and boiling water until the lumps have disappeared, set aside to cool down.
Beat the egg yolks, then beat in the sugar a little at a time.
Beat the mixture until it is spongy, thick, and pale in colour.
Stir the cocoa mixture, cooking oil and vanilla essence into the egg yolk mixture.
Sift together the cake flour, baking powder and salt and stir it into the mixture.
Beat the egg whites until just stiff and fold them into the batter with a metal spoon.
Pour the batter into the tins and bake on the middle shelf in the oven for 25 to 30 minutes, or until done. Turn out onto a wire rack to cool. Set aside.
For the Chocolate Mousse Layers in the Trifle:
300g 86% Dark Chocolate Bars ( I used Whittaker’s)
6 Large Eggs Seperated and at room temperature
90ml Caster Sugar for the chocolate mousse
1L Whipped Cream + 180ml Caster Sugar for the whipped cream
Start by making the chocolate mousse layer by melting the chocolate in a microwave safe bowl. After it have been melted, set aside to cooldown.
When it have cooled down, add the egg yolks one at a time and fold into the chocolate using a spatula.
In a new bowl whip up the 6 egg whites and while mixing using a hand mixer, add in 90ml caster sugar. The egg whites should still be runny and should be white in colour and there should be lots of bubbles. Slowly fold in the egg whites into the chocolate mixture till well incorporated.
In a new bowl whip up the 1L cream till stiff peaks form, add in 180ml caster sugar. Fold the whipped cream into the chocolate mousse mixture. Set aside in the fridge.
For the Cream Layers in the Trifle:
750ml Fresh Cream with 60ml caster sugar.
In a new bowl, whip up cream until whipped and add in 60ml caster sugar. Mix well with a hand mixer till well incorporated. Set aside in the fridge.
For the Topping on the Trifle:
I cut up some fresh cherries and used some shredded almonds and grated chocolate.
To start layering the trifle:
In a trifle glass bowl add in some chocolate cake crumbled up in smaller pieces. Place the cake layer at the bottom.
Pour the chocolate mousse over and add some more cake pieces, add some whipped cream on top and sprinkle some Baileys Irish Cream in between the layers on the chocolate cake. Repeat the layers until the trifle bowl is full. If you have some left over of each component, transfer to another glass dish or bowl and do the same. Cut up some cherries in halves place on top together with the shredded almonds and grated chocolate. Place in the fridge to set overnight. Serve and enjoy!
I used 6 large eggs in the chocolate cake mixture to get 3 layers. Out of my Trifle mixture came an extra one, you don’t have to use the same amount of cream you can use to your preferences. On one cake layer I poured some Baileys Irish Cream. You can add on every layer or also on one or two layers, depending on your preferences.
