Vanilla Cupcakes with Buttercream Icing

If you want to bake an easy vanilla cupcake recipe, that doesn’t take much time, is simple and easy to understand, then this is for you!

This is the perfect recipe for vanilla cupcakes or vanilla cake, with any frosting to your preference.

I got this recipe from a friend of mine, and it’s the best vanilla cupcake recipe. It’s light and melt in the mouth goodness. I just tweaked the recipe a little to make it better and give it a little lift.

Ingredients:
125g Butter at room temperature
160ml Caster Sugar
3 Eggs, seperated
375ml Flour
1 1/2 Tbs Baking Powder
60ml Milk
40ml Vanilla Paste

Method:
Whisk your egg whites in a bowl till stiff peaks form.
Add in the rest of the ingredients to a mixing bowl and mix on medium speed for 4 minutes till combine. Fold in the egg whites till just mixed, don’t over mix.
Line a 12 cupcake pan with cupcake cases. Place spponfuls full into the cupcake cases.
Place in a preheated oven on 180 degrees celsius for 15 – 20 minutes till a cake tester comes out clean.
Place on a wired rack till completely cooled down and decorate to your preference.
Serve and enjoy!
