I had so much fun making this dessert and it’s yummy too. The chocolate mint goes perfect with the whipped cream.
Take 100g 70% dark mint chocolate and break into pieces, melt in the microwave in a glass bowl for 30 seconds to 1 minute till melted. Set aside to cooldown to room temperature.
Seperate 3 large eggs in 2 seperate bowls.
Using a hand mixer, mix the egg whites till stiff peaks form, add in 60ml caster sugar.
Fold in the 3 large egg yolks one by one into the melted chocolate. Fold in using a big metal spoon. Fold in the egg whites also with a big metal spoon until well incorporated. Set aside.
In a new glass bowl, add in 250ml fresh cream. Using an electric mixer, mix the cream till whipped. Add in 60ml caster sugar.
Fold in the cream into the chocolate mint mouse using the big metal spoon till well incorporated.
Whip up 200ml of fresh cream in a new bowl. Set aside.
Place the chocolate mint mousse in glass ramekins. Place some whipped cream on top. Sprinkle some grated chocolate on top. Place in the fridge to set for 1 to 2 hours.
Serve and enjoy!
