I made this winter warmer beef stew and it came out better than what I expected. I used the sauce from our sweet and sour pork recipe and it enriched the flavour so much. It gave this beef stew a new depth of flavour.
Put the crock pot on saute/brown and press start. Add some olive oil in the crock pot and wait for it to heat up and add in:
1 Chopped Onion
1 Chopped Capsicum and fry till golden brown and soft for about 10 minutes.
Add in the 400g chopped beef meat and fry till brown and sealed.
Add 3 tablespoons of curry powder, some salt and pepper to taste and mixed herbs, together with 2 tablespoons of garlic, few drops of lemon juice and a few tablespoons of soya sauce.
Fry for about 15 minutes.
Add in 400g of chopped tomatoes, 3 tablespoons of chutney and 1 cup of sweet and sour pork sauce. The recipe can be found here for the sweet and sour pork sauce:
Mix through with the meat and onion and add in 3 peeled and chopped potatoes. Add in 3 peeled and chopped carrots and mix through. Add in 1 cup of mixed vegetables and 1 cup of beans. Add in 3 tablespoons soft brown sugar. Add in some more salt and pepper to taste.
Add in 1 cup of beef stock.
Add in 3 Tablespoons of cornflour mixed with some water and add it to the beef stew, mix it through if the consistency is too thick you can just add some more water.
Press stop on the crock pot and close the lid. Place the valve on close and press meat/stew for 1 hour. After 2 hour release the steam after opening the valve open the lid and serve with some rice.
