I enjoy inventing new fritters. And our toddlers approve, they enjoyed it so much.
Peel 1 big kumara and cut up into blocks.
Place in a microwave safe bowl, and add a little bit of water and a pinch of salt.
Place uncovered into the microwave and cook for 20 to 25 minutes till soft.
Drain the water and mash. Set aside to cooldown.
After the kumara has cooled down, add in 2 eggs and mix through.
Sift in pinch of salt, 1 cup of flour, 10ml baking powder and 30ml caster sugar.
In a deep frying pan, add in canola oil, that is halfway full. Heat up the oil on high and wait for it to get warm. Turn the heat down a little. Place spoonfuls full in the oil. Fry until golden on both sides for about 2 to 3 minutes.
Place on a tray lined with paper towel, and serve with some salt.
