This year, for my mother’s birthday, I baked her a banana and vanilla cake and it came out delicious. Here is the recipe:
The Recipe for the Vanilla Cake:
300g Butter at room temperature
320ml Caster Sugar
6 Eggs, seperated
3Tbs Baking Powder
80ml Vanilla Essence
Whisk your egg whites in a bowl till stiff peaks form.
Add in the rest of the ingredients to a mixing bowl and mix on medium speed for 4 minutes till combine. Fold in the egg whites till just mixed, don’t over mix.
Prepare 2 cake pans, with baking paper on the bottoms.
Place in a preheated oven on 180 degrees celsius for 45 minutes till a cake tester comes out clean.
Place on a wired rack till completely cooled down and decorate to your preference.
4 Riped Bananas, peeled and mashed
150g Unsalted Butter at room temperature
1 Cup White Sugar
4 Cups Flour
20ml Baking Powder
60ml Soft Brown Sugar
20ml Vanilla Essence
Pinch of Salt
Cream the butter, sugar, eggs and vanilla essence together. Add in the brown sugar and bananas. Sift in the dry ingredients and mix well, till just combined.
Preheat the oven to 180 degrees celsius. Pour cake batter in 2 prepared cake pans, with baking paper placed in the bottom of the cake pan.
After 45 minutes, remove from the oven and place on a wire rack, decorate to your own preference.
Buttercream Icing (Not so sweet)
350g Unsalted Butter
4 and 1/2 Cups Icing Sugar
1 Tsp Kosher Salt
10ml Vanilla Essence. 30ml Milk
90ml Strawberry Sauce(Optional)
Mix the butter and icing sugar in an electric mixer till light, yellow and fluffy, for about 2 minutes on low speed. Mix for another 4 minutes on medium speed. Add in the rest of the ingredients and mix well for 3 to 4 minutes till well combined. Decorate the cake to your own preference.
Place one banana layer and then a vanilla layer and then a banana layer again and finish with a vanilla layer. In between the layers spread some strawberry jam onto the layers.
I covered the cake in white buttercream, after filling the cake layers with strawberry jam. I placed it back into the fridge and then started decorating, after the white layer was covered.
You can add the strawberry sauce if you want, to the buttercream. For the colours, I added pink with some red drops, for the dark pink colouring and for the purple, some few drops of purple.
Place in the fridge after decorating and serve at room temperature.
Serve with a dollop of whipped cream and enjoy!
