Delicious and decadent dark chocolate mousse. Perfect for any occasion.
100g 92% Dark Chocolate Block
3 Eggs Seperated
120ml Caster Sugar for the Cream
30ml Caster Sugar for the Egg Whites
250ml Fresh Cream
1 Tsp Condensmilk
In a glass bowl add in 92% 100g chocolate block. Break up into pieces and melt in the microwave for 1 to 2 minutes, mixing every 30 second intervals till melted. Set aside to cooldown to room temperature.
In a new glass bowl, whip up the three egg whites until stiff peaks form, using an electric hand mixer. Add in the 30ml of caster sugar till well incorporated. Set aside.
In another glass bowl add in the 250ml fresh cream. Whip up till peaks form and slowly add the 120ml caster cream till well incorporated. Set aside.
After the melted chocolate has cooled down to room temperature, slowly add in the egg yolks one at a time, using a metal spoon. Add in the condensed milk, followed by the egg whites and then the whipped cream.
Pour the chocolate mousse mixture into glass ramekins and set inside the fridge till set, for 1 to 2 hours.
Serve and enjoy with a dollop of cream.
