I made this home made lemon curd, from all our leftover lemons in our fridge. I added a normal cup of lemon juice as well. This delicious recipe makes 1L lemon curd.
Ingredients: 7 Lemons, depitted and juiced (makes 250ml – 1 Cup) of Fresh Lemon Juice
250ml Lemon Juice
500ml Caster Sugar
60ml Condensed Milk
4 Egg Yolks
2 Tbs Cornflour mixed with 2 Tbs Water
Lemon Rind from 2 Fresh Lemons
50g Butter (at room temperature)
In a mixing bowl, mix together all the ingredients (except the butter & condensed milk)
Pour the mixture into a pot.
Place on the stove and continue whisking on low heat for about 20 minutes, until the mixture is a sauce consistency.
Remove from the heat, and let it cooldown.
Pass the lemon curd through a sieve and add the butter and condensed milk.
Mix well until combined and place into an airtight container in the fridge.
Serve on some toast or use as fillings on cupcakes and cakes.
