While making dinner, yesterday and after a long busy day with two toddlers. I wanted to make something that would be easy to eat and not make a lot of mess.
I love eating pies and especially the crust, that is golden, crispy and yum. I used beef with veggies and gravy as a filling. You can use from butter chicken to any filling you prefer.
I will show you with photos how I made these muffin pies. They are called muffin pies, cause they are made in the muffin pan.
Start by cutting up round shape baking paper shapes, like the size of a regular muffin plan circles until you have 12.
Cut up 3 flaky pastry sheets, into 4 squares and then into circles that will fit into each muffin tray.
Place the baking paper circles into the muffin tray, after you have prepared it. Place the flaky pastry circles in each tray, and press the sides over as well, fold them into the inside, until you have done this with all 12.
Cut up blocks of baking paper and place onto the flaky pastry sheets. Fill the baking sheets with baking beads, till everyone is filled.
Place in the oven on 200 degrees celsius (fan forced) and 220 degrees celsius, for 10 – 15 minutes till the edges turns golden brown.
Remove the baking paper and the beads, and add in your filling. Cut up 3 flaky pastry sheets in 12 blocks. Using an egg and a little bit of milk mixture, brush onto the edges of the pie base and press down the top of the pie top.
Brush some egg and milk mixture on top and do this with all 12.
Place into the oven on 200 degrees celsius (fan forced) and 220 degrees celsius normal oven for 10 – 15 minutes till golden brown and crispy.
Serve and enjoy with your favourite side of salad or as a delicious savoury snack.
