I made this banana bread with my toddler and it was so special spending time with her and involving her in the process too. I was suprised at the outcome as I only mix things together and was a little nervous if it is gone come out right.
It turned out yum, and full of banana goodness.
20ml Baking Soda
15ml Baking Powder
15ml Vanilla Paste
4 and 1/2 Cups of Flour
6 Eggs Mixed
9 Ripe Bananas
375g Unsalted Butter (at room temperature)
250ml Soft Brown Sugar
Pinch of Salt
Mash 9 ripe bananas in a mixing bowls.
Cream together the butter and soft brown sugar. Add it to the ripe bananas and mix well till well combined.
Mix the eggs and the vanilla paste in a new bowl, and set aside.
Sift dry ingredients together and add it to the banana mixture.
Add in the eggs and mix well till just combined.
Pour into prepared cake pans or loaf pans.
Bake at 180 degrees celsius for 45min to 1 hour till a cake tester comes out clean.
Serve warm with a spread of butter and enjoy!
