Festive Rocky Road with Caramilk & Dark Chocolate Mint

Nothing says Christmas, quite like rocky road. The first time I made it, it wasn’t perfect and somehow I messed it up. This year I just thought of trying it again with anything I can find in our pantry.

Luckily we had something and it turned out sooo good! It reminded me of that after dinner mint chocolate, it’s just yummy. I have to stop myself before I eat everything.

Ingredients:
1 Cup Marshmallows Chopped in halves
375ml Red and Green M&M’s
75g Red Glazed Cherries
Festive Sprinkles
4 Muesli or Chocolate Bars
1 Large Bar One Chocolate Bar
315g Caramilk Chocolate Melted
90g Dark Chocolate Mint Melted
2 Tbs of 3 Different Kinds of Festive Sprinkles

In a glass bowl add in the M&M’s.
Chop up all the bars into small blocks and add to the mixture.
Cut the marshmallows in halve or smaller if you prefer and add to the mixture.
Add in the red whole glazed cherries.
Add in 2 tablespoons of each festive sprinkle mixture and mix everything with your hands until well incorporated.

Melt the caramilk chocolate in the microwave for 2 minutes, mixing every 30 second intervals till melted.

Add in ons halve of the melted chocolate to the rocky road mixture and fold in slowly using a wooden spoon. Add the rest of the melted caramilk chocolate and incorporate till the rocky road mixture is covered all over.

Press down into a prepared baking tray, covered with baking paper. Press down until it is even. Place into the fridge for 30 minutes till set.

Melt the dark mint chocolate in another glass bowl for 2 minutes, mixing every 30 second intervals until melted.

Drizzle the dark chocolate over the rocky road. Going in opposite directions, to form a criss-cross. You can drizzle the dark chocolate to your own preferences.

Place back into the fridge, for overnight until set.

Remove from the fridge, place onto a wooden board or baking tray, and slice up into blocks. Place in an airtight container in the fridge.

Best serve with a cup of tea or coffee or any hot drink you prefer.
