My husband made this delicious breakfast for us this morning.
The name for this dish is avocado eggs benedict, cause the eggs are like the sauce for the avocado and when you eat it with bagels it’s even better.
Cut up 2 avocado’s in halve.
Remove the pit and place 4 eggs in all four of the 4 avocado’s halves.
Place in a preheated oven, in a baking tray on 220 degrees ceslius for 15 – 20 minutes till the eggs are just cooked and still runny. Remove from the oven.
Remove the halve avocado out of the shell and place or slice in slices on top of your bagel or toast, with some cheese if you’d like.
The sauce from the egg yolk will run over and cover your bagel.
The avocado taste baked and yum. Such a rich and delicate breakfast meal and so easy to make too.
