What I love about making rice crispy treats, is that you can make them in the microwave too. It’s so easy, quick and simple, it’s also fun to let the kids in on it too.
In a glass bowl add in 120ml of butter and 45 giant marshmallows / 1.025kg of marshmallows. Melt in the microwave for 2 – 3 minutes, mixing every 30 second interval till melted.
Add in 2 drops of pink food colouring or food colouring of your choice, and fold in using a spatula till well incorporated.
Add in 400g of rice crispies and mix well till the mixture becomes almost dry but not to dry, when you pull the rice crispies with the marshmallow it should look almost like thin strings when pulling then you know it’s right.
Cover your hands with butter and press rice crispy treats into a prepared big dish with baking paper as well. Press down and spread out evenly.
Place into the fridge to set. Remove from the fridge and cut up into blocks and place into an airtight container. Store in the fridge for two days. Freeze in the freezer for upto 6 weeks, wrapped in cling wrap and place in an airtight container.
Makes between 40 & 50 rice crispy treats.
