Baked Chicken with Bacon Bits, Cauliflower and Coconut Cream (Keto Friendly) Made two ways.

My husband made this for us yesterday evening. He and the girls ate it with potatoes included and I ate it without the potatoes.

You will need:

2 Chicken fillets

A few florets of cauliflower (about a cup more or less)

1 Pack of Bacon (200g) Chopped

1 Can of Coconut Cream

3 Potatoes Chopped

200g Grated Cheese

Salt and pepper to taste

Herbs and spices to taste

In a pan fry your bits of bacon till crispy and golden. Place into a bowl and set aside.

Add your potatoes into a microwave safe bowl and add a little bit of water. Precook for 6 minutes uncovered till soft.

Cut up the chicken fillets into slices and season and set aside.

In an oven pan add in your potatoes or cauliflower florets. On the next layer add your chicken strips and bacon bits. Pour over your coconut cream and season to taste. Sprinkle over some grated cheese.

Place in the oven on 180 degrees celsius and bake for 30 – 45 minutes till the chicken is cooked and golden brown.

Remove the oven pan and set aside to cool down.

Serve and enjoy!
