There are pancakes and then there are pancakes. In South-Africa we call crepes that are known here in New Zealand, we call them pancakes.
When you come across a worthy recipe that needs to be shared this is one of them.
Reinche is not only a very good friend of mine, but she is absolutely worth gold and has a big heart it’s contagious. She is so kind hearted and her door is always open.
Since we met a few months ago she has welcomed me and our girls and our family with open arms, she and her wonderful family.
Here is her amazing pancake recipe. The source of where she got her recipe from is unknown. She uses this recipe always.
250ml Cake Flour
5ml Baking Powder
5ml Lemon Juice
50ml Sunflower Oil
Sift the flour, baking powder and salt together.
Beat the eggs, milk, water and lemon juice together.
Add the flour mixture to the wet mixture and mix well. Add the oil and mix well so that the batter is as thick as cream.
Let it stand for 30 minutes to 45 minutes.
Grease a frying pan, preferably with a non-stick finish, very slightly with sunflower oil and heat until well warmed. Stir the batter and bake pancakes on the frying pan.
Delivers approximately 12 medium-sized pancakes. Sprinkle with cinnamon and sugar. You can make savoury pancakes by filling it with cheese and mushroom chicken sauce or with mince and grated cheese.
