I made this wonderful cake 7 years ago. It took me 7 years to finally found this recipe that I’ve been looking for that felt like forever. One of my friends love this cake. I was so happy when I found it.
Turned out I emailed the screenshots of the recipe to someone when I was reminded on one of my memories on Facebook. It’s amazing how I ended looking back on one of the memories and finding it through someone asking me to email it for them in the comments.
Here is my cake of 7 years ago:

Coca-Cola Marshmallow Chocolate Cake
Ingredients:
500ml Flour
500ml Sugar
5ml Salt
250g Butter
45ml Cocoa Powder
250ml Coca-Cola
375ml Marshmallows , cut into quarters
5ml Baking Soda
125ml Buttermilk
2 Eggs, beaten
5ml Vanilla Essence
Method:
Preheat oven to 180 ° C
Sift the flour and salt.
Add the sugar.
Heat the butter, cocoa and coca-cola together until the butter has melted, in the microwave for 10 – 15 minutes.
Remove from the microwave and add the marshmallows. Stir until the marshmallows have melted. Mix well with the flour.
Dissolve the baking soda in the buttermilk and add to the cake mixture.
Also add the eggs and vanilla.
Pour the mixture into a greased cake pan.
Bake at 180 ° C until a cake tester comes out clean, about 45 minutes.
Frosting:
125g Butter
45ml Cocoa Powder
90ml Coca-Cola
500g Icing Sugar
5ml Vanilla Essence
250g Cream Cheese
1 Can of Caramel
1 Cup of Dessicated Coconut
Method:
Heat up the butter, cocoa and coca-cola together in the microwave, for about 10 minutes, till butter is melted.
Add the icing sugar and mix well. Add most of the dessicated coconut as well as the vanilla.
Garnish the cake with the mixture and sprinkle with the rest of the dessicated coconut.
Place in the fridge so that the frosting sets and serve with a cup of coffee.
