Coconut Crunchies

Running out of oats and having to use the original recipe that is already on my blog and adding more coconut. It came out delicious and super crunchy and sweet. A great snack or lunch box snack that is healthy too.

2 Cups of Flour
3 Cups of Desiccated Coconut
1 Cups of Oats
1 Cup of Soft Brown sugar
250g Margarine or Butter
2Tbs of Syrup
1Tsp of Bicarb of Soda
Pinch of salt
1Tsp of Cinnamon

Melt butter and syrup, then add the bicarb of soda. When the mixture forms a foam, add to rest of dry ingredients while mixing with an electric mixture.

Press into prepared baking trays

Score into squares before going into oven, and cut into squares out of oven.

Bake at 180 Degrees Celsius for approximately 25 minutes or till golden brown.

Bake longer if a crispier biscuit is preferred, and slightly shorter for a more chewy biscuit.
