Vanilla Sponge Cupcakes with Buttermilk & Cream

Me and my girls had so much fun making these. It was a spur of the moment thing when we literally mixed up a few ingredients and out came the most fluffiest, yummiest cupcakes. Definitely gone be our go to vanilla recipe.

In a glass bowl mix together 4 egg yolks with 1 cup of sugar using a mixer until double in size and fluffy, add in 10ml of vanilla paste.

Whip up the 4 egg whites in a new bowl, until stiff peaks form and set aside.

In a new bowl sift 1 and 1/2 cup of flour with a pinch of salt 5ml baking powder and 5ml of baking soda.

In a mixing jar add in 600g buttermilk and 125ml of fresh cream. Mix well till well combined.

Fold in egg yolk mixture into the dry flour mixture and then while slowly adding the liquid mixture, mix until well incorporated.

Scoop into cupcake holders till 3/4 full. Place in a preheated oven on 180 degrees celsius. Bake for 30 – 45 minutes until a skewer comes out clean.

Place on a wire rack to completely cooldown. Decorate to your own preferences. Makes 24 standard cupcakes.
