I made this recipe using only coconut flour. It came out better than I expected and was so delicious. Best of all it is dairy free and you can change it up using a different flour like almond flour or any other gluten free flour. My husband took one bite and then ate halve of the baking tray, it was that good.
In a glass bowl, add in 2 egg yolks and mix together with 1 cup of caster sugar. Mix together until light, fluffy and double in size. Add in 10ml of vanilla essence and mix well. Set aside.
Whip up 2 egg whites until the peaks are firm and not falling out of the bowl when tipping it over. Set aside.
In another glass bowl
add in 1 and a 1/2 cup of coconut flour
5ml Baking Powder
5ml Baking Soda
Pinch of Salt
40ml Cocoa Powder (sifted)
400ml Coconut Milk
Mix all the ingredients together until well incorporated. Fold in the egg yolks and sugar followed by the whipped egg whites. Place into a baking tray that is prepared and bake in the oven on 180 degrees celsius for 30 minutes until a skewer comes out crumbly. Let it cool down completely before decorating to your own preferences.
